When I say this is an easy weeknight dinner, I do not lie. Not only easy, but most of the work is done in the slow cooker, while you can get other things done from your never-ending to-do list. {It never ends, does it?}


Another great thing about these sliders is that you can have it warm in the slow cooker for those nights when everyone has to eat dinner at different times as they come and go from activities and work. Buns are sliced, pickles are ready. You can have a fresh fruit or veggie already cleaned and ready to eat in the fridge. Open a bag of chips. Keep it simple {user-friendly}. I have served it with a creamy cucumber salad as well. Again, it is ready in the fridge.

5 boneless, skinless chicken breasts
Salt & Pepper, to taste
BBQ sauce, your favorite brand
1 pack of sweet Hawaiian rolls
Sliced pickles

Place chicken breasts in a slow cooker. Fill with water just to the middle of the chicken; add salt and pepper to season. Set slow cooker to high and cook for 2-3 hours; until chicken is cooked through.

When chicken is done, drain most of the liquid from the slow cooker. Then, take two forks and pull chicken into shredded pieces. Add BBQ sauce; only use as much as you like. Stir to coat.

Slice the sweet Hawaiian rolls. Top with BBQ chicken and pickle slices.

*I have also served them topped with a creamy cole slaw!
